Look at my newest addition to the shop! These casserole carriers were made in the 1970s by my grandmother for my mom and aunts!! Nanny made all kinds of things...as long is it used Red Heart Yarns!! I took the one mom had and copied it and have sold them to the ladies at church. Then I thought why not add them to the shop and share them with you?!! So far I have added one just now! Tasty Tuesday
Ok...I'm hungry and on a diet! Not good this time of day! I am trying to lose 10ish pounds before my birthday this summer....I will be the big 50. As depressing as that is, I don't want to add fat and fifty to my description. In the past two year I have put on about 15 pounds, give or take. Most of it appeared while I have been taking care of Sweet Mama. She has lost about 30 pounds...I found some of them. I have been trying to put weight on her...not me! So I am doing Weight Watchers. I have done it in the past and it does work! You just have to pay attention to what goes on your plate and in your mouth. But some things are not on the list.
I am sharing with you today a recipe from my favorite cookbook. Georgia Hometown Cookbook by Sheila Simmons & Kent Whitaker. It has tons of recipes from around the state of Georgia and local state festivals. This one sound good!
Chicken Taco Stew
1 boneless skinless chicken breast, cubed
1 package taco seasoning mix
1 cup water
1 cup cooked white rice
1 can whole kernel corn, drained
1 (15-oz) can pinto or chili beans, rinsed and drained
In a large skillet, lightly brown chicken. Ass taco seasoning and water; simmer 5 to 10 minutes. Ad rice, corn and beans; heat completely. Serve with shredded cheese, sour cream and chips.

An Update on the Adventures of Squirrely

Squirrely, hmmm what has he been up to now??!! Not much has been happening lately. It's been so hot..but the other day I saw him looking for a snack. Next thing I knew, he had decided to eat some of my geraniums that were hanging on the fence. URRR.. So I moved them and had to replant the pot. I moved a fern over in it's place which should be safe! Maybe...
Now that he is now coming over for breakfast, lunch and dinner, I needed a plan...fast!! My brother gave us a squirrel feeder from Iowa after Sweet Mama and I were there last summer visiting. He has one in his front yard of his new house. You could sit in the living room and watch them eat. Pretty cool! This is an Iowa Squirrel.He looks a little different from our southern grey squirrels. Must be the snow!

The feeder came with two ears of pre-pressed corn. The first ear I put out during the winter...which was a bad idea! It seemed to melt with each rainstorm. So I thought, now that it is summer, let's try again! I decided to put it out on the fence where the geranium had been (or close to it!)

So it sat there for a day or two until Saturday..success!!
He found it and started snacking! It is pretty hard but you can hear him just a chewing on it! The porch is probably 20 feet away from the fence. Which means I can see him...but he can see me! It took me a few days to get this shot! But he loves it and has been back snacking ever since! Squirrely is quite an acrobat! He feet never left the top of the fence the whole time he was eating!!
I guess I need to get some more Iowa corn!!

Tomatoes!
It is official....we now have tomatoes!! Each one of my plants has four baby tomatoes!!

Chicken Poppy Seed Casserole
Here is another recipe from my friend Judy! This is so tasty and delicious!!
Combine first 4 ingredients and layer with crushed Ritz crackers and poppy seed. (It is not as good without the poppy seed!) Top with Ritz crackers, melted butter, and poppy seeds. Bake in 350 degree oven for 30 to 40 minutes. Enjoy!

8 oz. sour cream
1 chicken, cooked

Broccoli Slaw...My Favorite!
I decided today to share this recipe with y'all because this was my lunch today! I helped Sweet Mama make it for her luncheon on Friday. There was enough left for lunch on Sunday!! Now keep in mind that I am not a fan of Broccoli..but this I like!
Broccoli Slaw
1 pkg broccoli slaw
Lite Honey Dijon salad dressing
1 pkg Trail Mix (I like fruit and nut variety)
craisins
raisins
1-2 Apples (Granny Smith, Fuji, Red Delicious - your choice)
1 small can madarin oranges (drained)
Place broccoli mix in a large bowl. Cut apples into bite size pieces. Add everything to bowl except dressing. Mix together. Add small amounts of salad dressing to mixture until it is lightly coated. More dressing can be added, but make sure to add in small amounts! You don't want to drown it in dressing. Place in refrigerator to chill. Serve cold. May be kept for 2 - 3 days. Enjoy!

More Rain and Maybe Some Soup
My Favorite Potato Soup
1 package of Knorr Leek Soup Mix
3 cans of potato soup (no water added)
5 cans sliced potatoes
1 can milk (use empty soup can)
1 cup water
Mix all ingredients together and place in crockpot. Cook on low all day. Serve with grated cheese, bacon bits and scallions. Enjoy!

Tasty Pineapple Casserole
I love this casserole! I got it from Judy at church. It is delicious. Every time she would bring it the whole thing would be gone! You must try it!
Judy's Pineapple Casserole
2 (20 oz.) cans unsweetened crushed pineapple (drain 1 can)
1 stick melted butter
1 cup sugar
6 Tablespoons flour
1 cup shredded sharp cheese
1 roll crushed Ritz crackers
*************************
Mix pineapple, butter, sugar, flour and cheese together with the juice from one can of pineapple. Place in 9 x 13 baking dish. Bake 20 minutes at 350. Remove from oven and top with crushed Ritz crackers. Dot with butter. Return to oven and bake 10 more minutes.

The Best Chicken Pot Pie Ever!
Seriously! This is the best chicken pot pie I have ever made!! I got it from my friend Dia in Savannah! You will love it and it is so easy!!
Chicken Pot Pie
2 boneless chicken breast
1 can cream of celery soup (no water)
1 bag mixed vegetables - cooked
chicken bouillon
poultry seasonings
2 deep dish pie crusts
*****************************
Boil chicken breasts in poultry seasonings. Shred cooked chicken into pieces. Lightly brown one of the pie crusts. Mix all other ingredients together. Place into lightly browned crust. Place uncooked pie crust on top of filled pie crust.
Bake at 350 degrees for 30 minutes. Enjoy!
